Looking for some great new food and beverage ideas to offer your group? Here are some trends worth noting for 2017. Chef Stefan Peroutka of The Venetian and The Palazzo in Las Vegas addressed the Teneo Hospitality Group at its recent Annual Summit.
1 |
Ethnic Breakfasts:
The diverse make up of many conferences demands a wider range of morning breakfast items. Europeans typically enjoy charcuterie with breads, while spicy empanadas suit South Americans and breakfast salads and spreads are popular in the Middle East. Expect to see an Asian influence with congee mixed with vegetables, and exotic fruits such as mangosteen, red bananas and Asian pears at breakfast. |
|
2 |
Artisanal & House Made:
Creating a custom-made in-house treat or small consumable item recreates a memory for conference guests. Think about asking your hotel to make house-made snack mixes, gourmet popcorn, locally flavoured mustards or infused seasoning salts. |
|
3 |
Mocktails & Cocktails:
The cocktail hour is making a comeback with classics such as Manhattans, Martinis and Side Cars in vogue again. Locally infused liqueurs, craft beer and wine contribute to a sense of place, while alcohol-free takes on Mojitos, Cosmos and Margaritas can be attractively presented. |
|
4 |
Bolder Flavours:
Millennials are adventurous diners, and don’t shy away from bolder flavours such as fish sauce or fiery Sriracha. Thai and Indian cuisine will find a space on more conference menus. |
|
5 |
Hybrid Cuisine:
Respecting two traditional cuisines is more about incorporating techniques, rather than mashing two flavour profiles together. Chefs that understand the concept will combine aspects from each cuisine to create one harmonious, balanced dish. |
